Phase 1
Training program
Introduction
In this program, we train a group of max 12 participants in pan-fried products. The training is carried out as an on-location training. This is a more convenient method for most categories we have worked with: people with disabilities, parents of children with disabilities. After the training, the participants can get a start-up-kit as a group or individual basis. The group-kit is upgraded to accommodate a larger number of employees.
After delivery of the start-up-kits, BISS does not leave her participants on their own. We are actively working with the participants together for at least two weeks after the start-up-kit delivery. After the two weeks, the follow-up is focused on remote assistance. Though it has our preference to have a field officer on ground who gives hands-on help to the bakeries. This person can carry out trainings in future, so that we copy the program on location. This depends on the ambition and budget of the partnering organization.
Training
Training of 12 participants in 9 pan-products (including mandazi, samosa, daddies, donuts), record keeping, costing, sales, HRM, hygiene, business planning. Participants learn how to bake using a weighing scale and cups and spoons, to maintain the production quality standard that is set in the training.
Start-up-kit delivery
The tools used in the training, are the same is those in the start-up-kit. Together with the ingredients, they are delivered to the participants, enabling them to start off work immediately.
BISS organizes the delivery to the training location and from there to the work locations.
Bakery Launch
After delivering the start-up-kit, BISS will have Field Officers on ground for two weeks, starting up the bakeries. They will make sure the bakeries reach a profitable production level and remain with an ambition plan.
Follow-up
BISS is developing a software (app) for effective remote follow-up. Every new BISS Bakery joins the app, which gives access to recipes, costing and their record keeping. The app will help bakeries to maintain their working capital, which is the backbone of their business. We hope the app to be working by the end of ’23. Besides the financial functionality, other functionalities will be there connecting the bakeries, creating a BISS community. Every bakery automatically joins the BISS community.
Future perspective – Phase 2
The initial idea of the program is to build the businesses in phases. After Phase 1, we have Phase 2. This is the training in actual oven-products combined with an accompanying start-up-kit. You will read more about this in the next topic ‘Phase 1+2’.
Phase 1+2
Training program
Introduction
This program goes a step further than Phase 1. Not only pan-products are trained, but also oven-products. Among those are different types of cookies, biscuits, bread products, several cakes and cake decoration. Besides the additional products, participants practice more record keeping, HRM, packaging & pricing and sales. We deliver a complete and functional bakery.
Training
The Phase 1+2 training is 7 weeks. Starting with a week of theory with a focus on record keeping, it’s followed by the teaching of pan-products. After baking, products are practically sold, recorded, costed and the profit is being counted. After the pan-products, we train over 10 different oven-products and their different baking methods. We aim to prepare participants ready to be able to make any recipe in future. Besides the baking, we continue to practically teach them the records, sales and more. We train HRM, business planning, hygiene and other relevant subjects for running a bakery. Our training is DIT certified and includes the DIT exam for all participants.
We end the training with a full week of practical production. In case of an on-location training, this will boost the hosting bakery and leave them with a good production, sales and profit.
Start-up-kits Phase 1+2
In case of an on-location training, we install the entire bakery at one of the participants their work location. We choose the most spacious bakery as the training location. The items we use for training, are their own items. By the end of the training, we deliver to them a full package of ingredients and they are ready to start. Before the training ends, we will have installed already the oven and other equipment for the other bakeries. This way, we create a minimum gap between training and starting of work.
Launch and follow-up
Like in the Phase 1 program, we offer participants a bakery launch. In case of a Phase 1+2 bakery, each bakery gets a Field Officer attached for two weeks. They make baking schedules together, bake and sell together. Get assistance in the record keeping. All bakery activities will be done several times under guidance of an experienced field officer. Bakeries join the BISS community. BISS will organize regional meetings, trainings and other activities if budget allows.
